I’ve been making this side dish for over 20 years now. Everyone with the exception of DH (he’s a very, very picky person) loves it. A restaurant in Augusta used to serve this and gave us the recipe for it. It’s simple and easy, a real no brainer. You only need three things to make this: russet potatoes, ranch dressing, and shredded cheddar cheese.
- Wash russet potatoes
- Boil or bake whole potatoes until just about done….potatoes should still be a little firm
- Drain and cut potatoes into wedges
- Spread out in casserole dish…try not to stack them if you can help it.
- Pour ranch dressing on top of potatoes….you can pour a lot or just a little whatever your preference
- Top potatoes with shredded cheese…a little or a lot, it’s up to you
- Microwave for about three minutes until cheese melts evenly
This is a great sidedish for steak, chicken or pork.
